This recipe is, without a doubt, the finest "pink stuff" I have ever tasted. It was introduced to my family in the late 1970s and has since become a cherished Christmas dessert.

  • 1 medium box (12 oz) small curd cottage cheese

  • 1 large box (13½ oz) non-dairy whipped topping

  • ½ to 1 cup pecans (optional)

Instructions:

Heat pineapple and stir in flavored gelatin and sugar until dissolved. Add cooked rice and mix thoroughly. Cool in the refrigerator. Fold in cottage cheese, whipped topping and pecans. Chill in the refrigerator. Serve by putting mounds on lettuce leaves for a salad or by putting in sherbet glasses for a dessert.
